Masala Base

1Heat olive oil in a skillet with a pinch of salt .olive oil: 2 tbsp (30ml), salt: 1/4 tsp (1g)

2Add yellow onion and fry until softened, about ⏱️ 7 minutes .yellow onion: 1 (150g, diced)

3Add tomato and fry together until the tomatoes darken and the mixture starts to thicken.tomato: 1 (150g, diced)

4Add garlic cloves and fry for ⏱️ 1 minute until fragrant.garlic cloves: 2 cloves (6g, minced)
Cook Stew

1Add fava beans to the skillet and season with cumin to taste. Add water if the mixture is too thick.fava beans: 800 g (cooked), cumin: 1 tsp (2g, ground), water: 1/2 c (120ml)

2Cook for ⏱️ 5 minutes until the fava beans start to soften. Mash half of the beans directly in the skillet to make a thick sauce.

3Add chickpeas . Let everything stew together. Taste and adjust with more salt and cumin if needed.chickpeas: 400 g (cooked), salt, cumin

4Stir in tahini , remove the skillet from the heat, and mix well.tahini: 1/2 c (120g)
