1Preheat oven to 160°C.

2Chop the parsley , cilantro , dill , spinach , and green onions until you get a fine mixture. Place the chopped herbs into a large bowl.parsley: 1 bunch (70g, leaves only), cilantro: 50 g, dill: 20 g, spinach: 100 g, green onions: 75 g

3Mince the garlic . Add the minced garlic, dried cranberries , and walnuts to the bowl with the herbs and stir to combine.garlic: 1 clove (peeled), dried cranberries: 75 g (chopped), walnuts: 75 g (toasted and chopped)

4In a separate bowl, whisk the eggs with the ground fenugreek seeds , salt , ground turmeric , and ground cinnamon .eggs: 8 pcs, fenugreek seeds: 1 tsp (2g), salt: 1 tsp (5g), turmeric: 1/2 tsp (1g), cinnamon: 1/4 tsp (1g)

5Pour the spiced egg mixture over the herb mixture and stir well to ensure the eggs are evenly distributed.
Bake

1Pour olive oil into a large baking dish (about 35x22cm).olive oil: 80 ml

2Pour the herb and egg mixture over the olive oil and smooth the top.

3Bake in the preheated oven for ⏱️ 30 minutes .

4Carefully remove from the oven, cut the kuku into squares, flip each square over, and bake for another ⏱️ 12 minutes until fully cooked.
