1In a large bowl, whisk the eggs with the fenugreek seeds , salt , turmeric , and cinnamon .eggs: 6, fenugreek seeds: 1 tsp (ground), salt: 3/4 tsp, turmeric: 1/2 tsp, cinnamon: 1/4 tsp

2Add the garlic , dried cranberries , and walnuts to the bowl and stir to combine.garlic: 1 clove (minced), dried cranberries: 50 g (chopped), walnuts: 75 g (toasted and chopped)
Greens

1In a food processor or by hand, finely chop the following herbs and greens: parsley , cilantro , dill , spinach (fresh or thawed), and green onions . Stir into the egg mixture.parsley: 70g (leaves only), cilantro: 50 g, dill: 20 g, spinach: 100 g, green onions: 75 g
Bake

1Put a couple spoonfuls in a microwave-safe bowl, cover with a lid, and microwave for two minutes. Taste and adjust the seasoning as needed.

2Preheat the airfryer to 160°C.

3Pour olive oil into the airfryer baking inset (about 20x20cm). Pour the herb and egg mixture over the olive oil and smooth the top.olive oil: 1/4 cup

4Bake for ⏱️ 30 minutes .

5Carefully remove from the airfryer, flip the kuku over, and bake for another ⏱️ 12 minutes until fully cooked. If needed, cut the kuku into squares before flipping to make it easier to handle.
